John Dory with Smoked Paprika

Pan-seared John Dory fillets topped with a fragrant smoked paprika butter. Crispy skin and tender, flaky flesh make this an elegant seafood dish perfect for a simple midweek dinner or special occasion.
Ingredients
- 4 x 180 gram skin-on John Dory fillets
- 50 grams softened butter
- ½ teaspoon smoked paprika
- 1 tablespoon olive oil
- Salt, for seasoning
- Sides such as vegetables or rice
Method
- Mix the butter and smoked paprika and set aside.
- Heat a large frying pan until hot, then add the olive oil.
- Season the John Dory fillets and place them in the pan skin side down.
- Use a fish slice to gently press the fillets flat to prevent curling at the edges.
- Cook for about 2 minutes, then flip the fillets.
- Add the smoked paprika butter to the pan and baste the fish as it melts.
- Cook until the fish is just done, around 2 more minutes, and the butter begins to foam.
- Remove from the pan and serve immediately with your choice of sides.
