Lime Kingfish with Beans & Ginger

Juicy oven-baked kingfish fillets with a zesty lime butter, paired with crisp green beans tossed with ginger, chilli, and peanuts. A fresh and flavourful seafood dish perfect for a light lunch or dinner.
Ingredients
- 4 x 200 gram kingfish fillets
- 3 limes – 2 sliced, 1 zested
- 1 clove garlic, crushed
- 60 grams melted butter
- ½ cup olive oil
- 6cm piece of ginger, julienne cut
- 500 grams green beans, trimmed
- 1 long red chilli (seeds removed), julienned
- ⅓ cup roughly chopped peanuts
- Salt & pepper, to taste
Method
- Preheat the oven to 220°C.
- Combine lime zest, garlic, and melted butter; season with salt and pepper.
- In a small roasting pan, place the lime slices in rows.
- Lay the kingfish fillets on top and brush with the lime butter mixture.
- Add about ¼ cup of water and cover tightly with foil.
- Bake in the oven for around 15 minutes, or until just cooked.
- In a small saucepan, heat the olive oil with the ginger until golden. Drain the ginger and reserve the oil for the beans.
- Cook the green beans in salted water for about 3 minutes and drain.
- Toss the beans with the ginger oil, chilli, and about half of the ginger and peanuts. Season and stir to combine.
- Serve the kingfish with lime slices and the beans, garnishing with the remaining ginger and peanuts.
