Mediterranean Style Mackerel

Fresh mackerel baked with aromatic herbs, garlic, and lemon in foil to lock in flavours. This easy Mediterranean-style dish is perfect with a fresh salad for a light, healthy meal.
Ingredients
- 2 x 400 g fresh mackerel, cleaned and gutted
- 3 large cloves garlic
- 1 teaspoon salt
- 1 teaspoon ground coriander
- ½ teaspoon ground cumin
- ¼ cup finely chopped fresh parsley
- ¼ cup finely chopped fresh dill
- 1 lemon, thinly sliced
- Olive oil
- 3 tablespoons fresh lemon juice
Method
- Preheat the oven to 180°C and place a roasting pan inside to heat.
- Crush the garlic with salt to a paste, then add coriander and cumin. Mix through parsley and dill.
- Pat the mackerel dry inside and out. Salt inside and out, then place on an oiled piece of foil large enough to enclose the fish.
- Stuff the cavity with lemon slices and the parsley-dill mixture. Drizzle generously with olive oil.
- Fold the foil over the fish and seal tightly. Place on the heated roasting pan and bake for approximately 30 minutes until cooked.
- Serve with a Mediterranean-style salad.
