Paua Fritters
Golden, savoury paua fritters with spring onion and parsley, lightly fried to perfection. Delicious served with tartare, sweet chilli, or spiced yoghurt.

Ingredients

  • 250 grams minced paua
  • ½ cup self-raising flour
  • ½ teaspoon salt
  • 2 eggs
  • 1 spring onion, chopped
  • 2 tablespoons chopped parsley
  • Milk or cream (to adjust texture if required)
  • Oil for frying

Method

  1. Place the minced paua in a bowl and sieve in the self-raising flour and salt.
  2. Add the beaten eggs, spring onion, and parsley, mixing well to combine all moisture with the flour.
  3. The batter should be thick; add milk or cream if required to achieve this consistency.
  4. Heat oil in a flat-bottom fry pan or BBQ hot plate over medium heat.
  5. Drop large spoonsful of batter into the pan, leaving room for expansion. Flatten slightly if needed.
  6. Once golden on the bottom and bubbles appear on the edges, carefully flip the fritters.
  7. Fry until golden and cooked through completely.
  8. Serve immediately with your favourite sauces such as tartare, sweet chilli, or spiced yoghurt.
