Paua Fritters

Golden, savoury paua fritters with spring onion and parsley, lightly fried to perfection. Delicious served with tartare, sweet chilli, or spiced yoghurt.
Ingredients
- 250 grams minced paua
- ½ cup self-raising flour
- ½ teaspoon salt
- 2 eggs
- 1 spring onion, chopped
- 2 tablespoons chopped parsley
- Milk or cream (to adjust texture if required)
- Oil for frying
Method
- Place the minced paua in a bowl and sieve in the self-raising flour and salt.
- Add the beaten eggs, spring onion, and parsley, mixing well to combine all moisture with the flour.
- The batter should be thick; add milk or cream if required to achieve this consistency.
- Heat oil in a flat-bottom fry pan or BBQ hot plate over medium heat.
- Drop large spoonsful of batter into the pan, leaving room for expansion. Flatten slightly if needed.
- Once golden on the bottom and bubbles appear on the edges, carefully flip the fritters.
- Fry until golden and cooked through completely.
- Serve immediately with your favourite sauces such as tartare, sweet chilli, or spiced yoghurt.
