Squid Stuffed with Prawns & Fish
Tender squid tubes filled with a prawn and fish mixture, baked in a rich tomato and wine sauce. A comforting seafood dish perfect for sharing with family or friends.

Ingredients

  • 4 squid tubes
  • 250 grams raw prawn meat
  • 250 grams firm fish fillets
  • ½ t salt
  • 1 T chopped parsley
  • 1 large tomato, peeled & seeded
  • 1 small onion, quartered
  • 125 ml olive oil
  • ¼ t paprika
  • 3 T white wine
  • 1 slice of white bread
  • Lemon wedges, to garnish
  • Vegetables or salad, as accompaniment

Method

  1. Preheat oven to 180°C.
  2. Clean squid tubes, remove spine and skin, wash with cold water, and drain on kitchen paper.
  3. Coarsely chop prawns and fish, combine with parsley and ¼ t salt.
  4. Stuff the squid with the prawn mixture, leaving 2 cm at the bottom, and secure with a toothpick. Place in a glass baking dish.
  5. Puree tomato, onion, oil, paprika, wine, bread, and remaining salt in a food processor.
  6. Pour tomato mixture over the squid, cover with foil, and bake for 60 minutes. Uncover and bake for another 30 minutes.
  7. Serve hot with lemon wedges and salad or vegetables.
