Sweet & Spicy Slipper Lobster

Halved slipper lobsters cooked in a rich, sweet and spicy sauce with eggs, tomatoes, and aromatic vegetables. A quick and indulgent seafood dish perfect for two.
Ingredients
- 3 x slipper lobster, halved
- 1 red onion, diced
- 1 green capsicum, diced
- 2 tomatoes, diced
- 1 T cornflour mixed with ¼ C water
- 3 T oyster sauce
- 3 T ketchup
- 2 eggs, beaten
- 1 t sambal chilli
- 1 T minced garlic
- 2 T rice wine
- 3 C water
Method
- Heat some olive oil in a pan and add the minced garlic, onion, and capsicum. Cook until fragrant.
- Add water, ketchup, oyster sauce, and rice wine. Bring to the boil and add the tomatoes.
- Add the slipper lobster and cook through for a few minutes.
- Add the cornflour mixture and stir to thicken the sauce.
- Add the beaten eggs and stir through lightly. Cook for around 2 minutes until the egg is set.
- Serve immediately, garnished with fresh herbs.
