Gurnard with Garlic & Lime
Lightly floured gurnard fillets pan-fried until golden and finished with fresh garlic, parsley and a squeeze of lime. A simple, fresh seafood dish perfect for a quick midweek meal.

Ingredients

  • 500 grams gurnard fillets
  • ½ cup flour
  • 3 cloves garlic, minced
  • 1 tablespoon chopped parsley
  • Ground black pepper
  • Salt
  • Fresh lime wedges (or juice)
  • Olive oil for frying

Method

  1. Season and coat fish fillets with garlic, salt, freshly ground black pepper and parsley.
  2. Place flour on a plate and lightly roll fish fillets to coat.
  3. Heat a small amount of olive oil in a non-stick pan over medium heat.
  4. Pan fry gurnard fillets for about 3 minutes per side or until fully cooked and golden.
  5. Place fish on serving platters and drizzle with fresh lime juice.
  6. Serve with mixed salad or fresh vegetables.
