Thai Coconut Mussels
Tender Greenshell mussels cooked in a fragrant Thai-inspired mix of lemongrass, ginger, garlic, chilli, and finished with rich coconut cream. Perfect served with rice or steamed vegetables.

Ingredients

  • 1kg Greenshell mussels, scrubbed and debearded
  • 2 T oil
  • 2 stalks lemongrass, chopped
  • 2cm fresh ginger, chopped
  • 1 fresh chilli, chopped
  • 4 cloves garlic, chopped
  • Salt & pepper
  • ½ C water
  • 1 C coconut cream

Method

  1. In a pan with a lid, heat the oil and add lemongrass, ginger, chilli, and garlic. Stir to release the aromas.
  2. Add water, salt, and pepper; stir to combine.
  3. Add the mussels, stir, then cover with the lid.
  4. Bring to a boil and cook until all mussels have opened, about 4-5 minutes.
  5. Remove the mussels and keep warm.
  6. Pour the coconut cream into the pan and boil until reduced by half.
  7. Pour the sauce over the mussels and serve with rice or vegetables.

BBQ Greenshell Mussels
Juicy Greenshell mussels cooked on the BBQ in a foil “pan” with garlic, chilli, butter, and white wine. Serve with crusty bread for a perfect starter or light meal.

Ingredients

  • 2 cloves garlic, finely chopped
  • ½ cup white wine or stock
  • 1 red chilli, finely sliced
  • 12 Greenshell mussels
  • 50 grams butter, cubed
  • Juice of ½ a lime
  • Salt & pepper, to taste
  • 1 onion, finely chopped
  • Small bunch of parsley, finely chopped

Method

  1. Preheat BBQ to 175°C.
  2. Clean and debeard the mussels.
  3. Lay tin foil in a cross shape and place 6 mussels in the middle.
  4. Fold up to make a pan shape.
  5. Divide the onion, chilli, butter, lime juice, and stock between both “pans.”
  6. Season with salt and pepper and add parsley.
  7. Seal the foil, leaving an air pocket, and place on the BBQ for 10 minutes.
  8. Transfer to a serving plate, top with the onions and juices, and serve with crusty bread.

Is it frozen?

If the product title includes the word frozen then yes, otherwise all other seafood listings are fresh. All frozen seafood is flash-frozen at peak freshness immediately after processing, locking in flavour, texture, and nutrients.

Can I freeze or refreeze?

Frozen seafood: Once thawed, do not refreeze; keep refrigerated and use within 24hrs.

Fresh seafood: Freeze as soon as possible and within 24 hours of delivery for best quality.

What if I’m not home?

If no one is available at the delivery address, your order will be placed in the location on your delivery notes. We recommend leaving clear instructions for a shady cool spot to avoid spoilt deliveries.

How long will it stay fresh?

Fresh seafood: Consume within 48 hours of delivery for best quality. Fresh Seafood may last up to 5 days from packing.

Frozen seafood: Can be stored at -18°C or below for several months, depending on the product. Check the packaging for specific storage periods.

How do I thaw it?

Frozen seafood: Thaw in the refrigerator overnight or in a sealed bag under running cold water. Avoid microwaving or warm water.

Fresh seafood: Ready to use, keep refrigerated until cooking.

How much should I get?
